I Heart Veggies

Wednesday’s #Elf4Health challenge was to eat 3 servings of vegetables before 2pm. I actually nailed this one and even went veggie-heavy for dinner as well.

After yet another trip to the dentist, I ended up without the ability to chew in the morning so I had a Naked Juice  for breakfast. GREEN MACHINE ANYONE? Hello, fruits, veggies and a straw.

I snacked on a yogurt Nutrigrain bar and then had an Amy’s Light and Lean meal served over spinach for lunch. Spinach, tomatoes, broccoli and asparagus – yum!

I snacked on a Kind bar in the afternoon and finished up my day with a salad. I had been wanting to recreate the salad that Addy and I had at The Drafting Table the other weekend for lunch and while it wasn’t perfect, it was good.

I took some arugula and tossed it with S&P, olive oil and balsamic vinegar then added in some pears, prosciutto and some ricotta. It’s a really tasty combination!
