Salads and Swimming

I did not post my salad photo yesterday, but to be honest it was kind of boring.

Here it is anyway.  The most exciting thing about this salad was probably the mozzarella cheese.

I switched up today a bit and got a broccoli and cheese flat bread with a side salad.  I added some Gruyere cheese on it and little pieces of toast that they had in the cafeteria for the french onion soup.   There was so much salad it overshadows the flatbread!

I don’t know if the rules to the salad challenge apply to the weekends, I should check with Stephanie, but I will definitely try to hold myself accountable the next two days too!

Last night could have been my favorite night of swimming yet. Seeing Michael Phelps win his first individual gold of this Olympics and be the first to win an event in 3 consecutive Olympics and watching Rebecca Soni smash her world record that she set earlier in the day was incredible!

She is so so awesome!

Bring on the 100 fly and medley relays for both the men and women!!
